Established since 2010 in the small village of Vion, Domaine Jacouton is located in the heart of the Northern Côtes-du-Rhône. It is here, beyond the village, on the side of the Rhodanian hills, that Jean-François Jacouton decided to cultivate his native soil by installing his 6 hectares of vines, mainly Saint-Joseph.

Viognier, Marsanne, Syrah, Chasselas or Roussanne : our white wines are looking for freshness and minerality, while our red wines are sometimes silky and fruity, sometimes more robust. Domaine Jacouton also offers a range of Vins de Pays, combining finesse, elegance and delicacy.

THE ESTATE

Trained at Domaine Courbis, at the southern tip of Saint-Joseph appellation, Jean-François Jacouton continues his apprenticeship in several regions. First in Côte-Rôtie, then in Savoie, he returned in 2003 and became a collaborator in the wine cellar of Tain-l’Hermitage. Driven by the desire to vinify his own grapes and also to meet his customers,he created his cellar in 2010.

His grandfather André introduced him, when he was very young, to the pleasures of working in the vineyard. It gave birth to a real passion for Jean-François. This is why he first took over the land of his grandfather, a few miles north of the city of Tournon, leaning against the hills that surround the Rhône Valley.

The granitic plateau overlooking the village of Vion makes it a favorite land for Chasselas and Viognier, perched at an altitude of 400 meters. Jean-François brought back this taste of « mineral freshness » from his years spent in Savoy to enrich his Viognier IGP Colline Rhodaniennes.

Tasting

The robe is a beautiful deep red with red-brown reflections. The nose is expressive on red fruits and black fruits. Palate is structured, with substance and also a nice intensity. Beautiful note of concentrated ripe fruit. Subtle toasted notes coat the wine. Tannins are very fine and silky.

Food and wine pairing

Game stew, boar roast, grilled beef, blue-veined cheese.

Tasting

La robe est d’un beau rouge profond aux reflets rouge Rubis, le nez expressif sur la garrigue et le thym, sans oublier les caractéristiques d’une Syrah mûre avec des notes de fruits frais. Une bouche élégante et fine, avec de la matière. De belle note de fruit mûr mais pas compotés. Des notes épicés et toastées subtiles tout en gardant une certaine fraîcheur. Une longueur en bouche franche où ressort les fruits rouges de la syrah.

A roasted game, un « bœuf bourguignon » (beef stewed in red wine), a stuffed pigeon, a characterful cheese from Auvergne or an old Beaufort cheese, a Black forest cream cake.

Tasting

The robe is a beautiful ruby red with purplish reflections. The nose, very pleasant, is characteristic of a ripe Syrah, on black fruits, pepper and a touch of violet. Palate has a velvety texture, with wine offering notes of fresh fruits. Good length with a slight spicy taste.

Roasted lamb rack, prime rib on a barbecue grill, veal steak with candied shallots.

Tasting

The robe is a beautiful deep garnet red. Nose is expressive on red fruits and black olives. Palate is structured, complex and tannic but full of finesse. Beautiful notes of concentrated ripe fruits mixed with toasted and smoky notes wonderfully coat the wine. Tannins are very fine and silky.

Tasting

It has a very dense, black cherry color and a characteristic nose of a ripe Syrah, on black fruits. The wine is fleshy, with notes of nice ripe fruits. Structured, it leaves slightly spiced notes on the palate.

Tasting

Robe is a beautiful bright yellow. Nose has beautiful floral notes and a barely perceptible woody note. Palate is ample and structured with a well coated freshness, a fruity bouquet with white flowers aromas. A fine and elegant long finish.

Food and wine pairing

Around an aperitif (but not iced), Bresse chicken with cream and morels, sole cooked in a white butter sauce, or around a cheese board.
Morille, Sole au beurre blanc ou encore une plateau de fromage.

Crystalline robe. A nose of jasmine flower, mango and apricot jam.

Tasting

Crystalline robe. A nose with lemon, honeysuckle and delicate herbs. A fresh and slightly creamy palate. Chasselas brings finesse and polish in a delicate and pleasant way the Marsanne strong nature.

Tasting

A bright robe with golden reflections. A complex nose, with clear notes of apricot, white peach and violet. A balanced palate with character, mixing freshness with white flesh fruits and apricot aromas. A persistent lenght, round, fleshy, but very aromatic.

Food and wine pairing

Around an aperitif (but not iced), with foie gras, grilled lobster, river fishes. Ideal with dry cheese such as Rigotte de Condrieu … Or even with dark chocolate !

RÉSILIENCE

Tasting

La robe est d’un jaune franc. Le nez a des arômes de fleurs, de fruits blancs; la bouche est ample.

C’est un vin riche, fin et onctueux avec un léger boisé bien fondu.

The small village of Vion is one of the five first municipalities of the Saint-Joseph appellation, and the vineyards of the Sainte Epine cuvée are its historical cradle. Powerful and silky, Saint-Joseph red wines oscillate between sweet and spicy scents for some, and notes of olives and garrigue for others. The white Saint-Joseph cuvée « Souvenirs d’André », tribute to Jean-François’ grandfather, offers a wine with white fruits aromas, all in roundness and freshness.

Domaine Jacouton’s wines are mainly vinified in barrels, including Vins de Pays, which prove to be an excellent price/pleasure ratio.

Beyond the soils composition and the topography which make machine-work complicated, Jean-François gives priority to the quality of the grapes harvested and the preservation of soils. This is why almost all the work is done by hand, from tying up to the harvest, including pruning.

Domaine Jacouton also strives to produce its wine in the most sustainable way possible, and has therefore been committed, since its creation, to sustainable agriculture.
